Green Sichuan berries are not to be confused with red Sichuan berries, their close cousin. This "false pepper" is a cousin of the Sansho Bay which is found in Japan, Timut Bay which grows in Nepal, or also from the Andaliman Bay Indonesian. It is a spice from a shrub native to the Sichuan region of China, from the Rutaceae family ( Zanthoxylum ). Like yellow and green lemons, red Sichuan and green Sichuan berries are two varieties with different flavors.

Green Sichuan berries look like peppercorns with intense citrus aromas, with a lot of freshness in the mouth, very aromatic with hints of lime. Beyond its unique flavor, what makes green Sichuan berries original is the numbing sensation they cause on the tongue. This berry leaves a slight tingling or even sparkling effect on the tip of the tongue.

Among the best green Sichuan berries are those that come from southern Sichuan, along the border with Yunnan Province. This single-origin false pepper is grown in Jinyang County in Liangshan Yi Autonomous Prefecture in Sichuan.

Usage tips

In cooking, green Sichuan berries are often paired with chili peppers so that the numbing effect of the berry neutralizes the heat of the chili pepper and brings out the other flavors. Their citrus character makes them ideal for use with chicken, fish, and seafood, especially in stir-fries. They will add a lively spiciness if added to soups, sauces, or stews. In Yunnan, they are pounded after being toasted in a pan, and sprinkled over fermented cheese steamed tofu. They are called “Houa tchiao” there.
